Real copper on the outside, nothing sprayed on the inside: the copper frying pan that is what the label says.

Many pans sold as copper are copper-coloured: a thin body with a copper-coloured coating on the outside and a nonstick spray on the inside. Their own reviews read the same way: great for three uses, then everything sticks, then the centre warps. This one is different where it counts. The outside is real copper, not paint. The cooking surface is bare, non-reactive metal with nothing sprayed on it.

Heat the pan first, add a little oil, and it cooks the way a real pan does. Sear, then deglaze with wine or stock and the fond lifts straight into the sauce.

Why you'll love it:

  • Real copper exterior: copper on the outside, not a copper-coloured coating
  • Nothing sprayed on: a bare, non-reactive cooking surface, so nothing to peel, flake or wear off
  • Works on induction: the base is induction compatible, and it works on gas and electric too
  • It darkens, because it is copper: lemon and salt brings it back, or leave it

Available in four sizes: 20, 24, 26 and 28 cm. Works on gas, electric and induction hobs. Hand wash. Warranty in writing.

Copper on the outside, a multi-metal body underneath built to spread heat across the base and work on induction, and a non-reactive cooking surface with nothing sprayed on it. We describe the construction as a whole rather than as a layer list, and we would rather say that plainly than pretend otherwise.

Care Instructions

Hand wash with warm water and a little soap, and dry it rather than leaving it to drip. Copper darkens with use; two minutes with half a lemon and a pinch of salt brings it back, or leave it. Heat the pan before the oil goes in, and use medium heat for most cooking; copper responds quickly, so you rarely need more.

The problem

You've bought a "copper" pan before... how did that go?

Copper-coloured paint on a thin body with a nonstick spray inside. Great for three uses, then everything stuck, then the centre warped. The problem was never you. It was never copper.

Copper-coloured, not copper

Copper-coloured, not copper

A thin copper-coloured coating over a plain body. Buyers who scraped one found foil or paint. The word on the box was the only copper in it.

The spray inside dies in uses

The spray inside dies in uses

"Worked well the first three times I used it, thereafter food sticks." The most-voted review on the best-known listing in that tier, and the same story under the rest.

Then the centre warps

Then the centre warps

A raised, bowed base is one of the most repeated complaints in that tier. Oil runs to the edge, food stews in the middle, and the pan goes in the bin.

The Solution

100% Real Copper

Copper on the outside, a multi-metal body underneath, and a non-reactive cooking surface with nothing sprayed on it. Here is exactly what you are getting, and what you are not.

Copper on the outside, not paint
Real copper, so it darkens with use, which paint cannot do. Scrape it and it is still copper.
Nothing sprayed on the cooking surface
Bare, non-reactive metal. Nothing to wear off, nothing to flake into your food, and nothing that changes between year one and year five.
A real copper pan.
A little oil, proper heat, a real sear. It cooks like any good bare-metal pan, and we would rather tell you that here than have you find out in the kitchen.
A multi-metal body underneath
Built to spread heat across the base and to work on induction, which copper alone cannot do. We describe it as a whole rather than as a layer list, and we say so.
Works on induction
The base is induction compatible, and it works on gas and electric as well. A copper-coloured pan that only heats in the centre on induction is the category's documented failure; this pan was built against exactly that.

Frequently asked questions

Is the outside real copper?
Real copper, not paint, foil or plating. That is the difference between this and the pan from the TV ad, whose own reviews say the colour lifts and the centre warps. Ours is built to be used and to darken, which paint cannot do.
What is the body made of?
Copper on the outside, a multi-metal body underneath that spreads the heat across the base, and a non-reactive cooking surface with nothing sprayed on it. We describe the construction as a whole rather than as a layer list, the same as we do for our titanium pans, and we would rather say that plainly than pretend otherwise.
How thick is the copper?
We do not publish layer measurements for any pan we sell, titanium included. What we put in writing is the construction: real copper on the outside, a multi-metal body, a non-reactive cooking surface with nothing sprayed on it, and a base that works on induction.
Does it work on induction?
Yes. The base is induction compatible, and it works on gas and electric as well. That is the one thing a copper pan is not supposed to do.
Will it tarnish?
Yes. Copper darkens with use and so will this pan, and we would rather tell you now than after. Two minutes with lemon and salt brings the shine back, or leave it and it turns a warm brown. Paint stays bright. Copper does not. That is how you tell them apart.
Can I cook acidic food in it?
Yes. The cooking surface is non-reactive, so acidic food is fine. There is no tin lining to wear through, so there is nothing to melt, nothing to re-tin and no point where the copper starts touching your food.
How do I look after it?
Hand wash with warm water and a little soap, and dry it rather than leaving it to drip. Lemon and salt when you want it bright.
How is this different from the $20 copper pan?
That pan is a thin body with copper-coloured paint on the outside and a spray on the inside, and its own reviews say it lasts about three uses. This is real copper on the outside, a multi-metal body, a bare cooking surface with nothing to wear off, and it works on induction. It darkens rather than dies.
Is it nonstick?
Its not and we say so before you buy. Nothing is sprayed on the cooking surface, so there is nothing to wear off, and that also means it is not nonstick. Heat the pan first, add oil, and let food release when it is ready rather than when you push it. Eggs want a little more fat and a little less heat than you think.
