Real Copper Casserole pan
For people who want real copper.
Details
Real copper on the outside, nothing sprayed on the inside: the copper casserole pan that is what the label says.
Many pans sold as copper are copper-coloured: a thin body with a copper-coloured coating on the outside and a nonstick spray on the inside. Their own reviews read the same way: great for three uses, then everything sticks, then the centre warps. This one is different where it counts. The outside is real copper, not paint. The cooking surface is bare, non-reactive metal with nothing sprayed on it.
Heat the pan first, add a little oil, and it cooks the way a real pan does. Stews, braises and slow simmering. Brown first, then bring the liquid in; the surface takes tomatoes and wine without complaint.
Why you'll love it:
- Real copper exterior: copper on the outside, not a copper-coloured coating
- Nothing sprayed on: a bare, non-reactive cooking surface, so nothing to peel, flake or wear off
- Works on induction: the base is induction compatible, and it works on gas and electric too
- It darkens, because it is copper: lemon and salt brings it back, or leave it
Available in three sizes: 24 cm, 26 cm and 28 cm. Works on gas, electric and induction hobs. Hand wash. Warranty in writing.
Copper on the outside, a multi-metal body underneath built to spread heat across the base and work on induction, and a non-reactive cooking surface with nothing sprayed on it. We describe the construction as a whole rather than as a layer list, and we would rather say that plainly than pretend otherwise.

Care Instructions
Hand wash with warm water and a little soap, and dry it rather than leaving it to drip. Copper darkens with use; two minutes with half a lemon and a pinch of salt brings it back, or leave it. Heat the pan before the oil goes in, and use medium heat for most cooking; copper responds quickly, so you rarely need more.
The problem
You've bought a "copper" pan before... how did that go?
Copper-coloured paint on a thin body with a nonstick spray inside. Great for three uses, then everything stuck, then the centre warped. The problem was never you. It was never copper.

Copper-coloured, not copper
A thin copper-coloured coating over a plain body. Buyers who scraped one found foil or paint. The word on the box was the only copper in it.

The spray inside dies in uses
"Worked well the first three times I used it, thereafter food sticks." The most-voted review on the best-known listing in that tier, and the same story under the rest.

Then the centre warps
A raised, bowed base is one of the most repeated complaints in that tier. Oil runs to the edge, food stews in the middle, and the pan goes in the bin.
