The minute after you turn it down
You turn the heat down and the pan keeps cooking. That next minute is where the pan sauce breaks and the eggs go from soft to rubber. This pan is built to skip that minute. Here is what it does, and, just as important, what it does not.

It changes when you tell it to

Ask people who cook on copper what it does for them, and the answer is not about looks. It is control: "responds almost instantly to heat changes", "when you turn the heat down, the pan cools down quickly as well".

Is it more responsive than a thick pan?
A clad pan responds faster than a slab because there is less metal to heat or cool. That is the trade: it will not hold heat like cast iron, and we do not pretend it does.
Does that work on induction too?
Yes. The base is induction compatible, and on induction the difference you feel is the pan alone.
Reason #2
What it will not do, said plainly
Copper is sold with a lot of adjectives. Here is the honest version. A clad copper pan responds fast because there is not much metal to heat or cool. The same fact means it does not hold heat like a slab of cast iron, and it does not come back from a cold steak any faster than the hob under it can push heat in.
Response is the claim. Heat storage is not. If you sear a lot of thick steaks and want a pan that shrugs when the meat lands, keep your cast iron for that job.
If you cook most nights and you are tired of the pan doing its own thing after you adjust the heat, this is the pan for that.
So it is not a searing pan?
It sears with oil and proper heat, like any real pan. What it does not do is store heat like cast iron. We would rather you know that now.

A surface you can deglaze in
The cooking surface has nothing sprayed on it: bare, non-reactive metal. That means fond, which means a pan sauce. Sear, lift the meat, splash of wine or stock, scrape, reduce, mount with butter, no scorch.
It is not nonstick. You cook on it the way you cook on any real pan: a little oil, proper heat, a real sear. Acidic food is fine; there is no tin lining between you and the sauce, and nothing on the surface for a deglaze to lift.
Not nonstick is not a drawback here. It is the reason the sauce exists.

Induction is fast and it is unforgiving: turn it up and the pan gets everything at once. A pan that lags on induction is a pan you fight. Real copper, not paint, foil or plating. That is the difference between this and the pan from the TV ad, whose own reviews say the colour lifts and the centre warps. Ours is built to be used and to darken, which paint cannot do.
2. What is the body made of?

5. Does it work on induction?

6. Will it tarnish?
